Greg’s Split Pea Soup
Easy for Easter Leftovers

Split Pea Soup

Ingredients:
¼ cup unsalted butter
2 cups chopped onion
1 cup diced carrot (¼-inch dice)
1 cup diced celery (¼-inch dice)
½ teaspoon freshly-ground black pepper
2 cloves garlic, minced
1 pound dried split peas, rinsed and sorted
1 cup diced ham (¼-inch dice)
1 remaining meaty ham bone
1 large bay leaf (or 2 small)
2 teaspoons fresh thyme leaves
6 cups chicken stock
2 cups water

Directions:

In a large stockpot combine the butter, onion, carrots, celery, and sauté for 10 minutes.

Add the remaining ingredients except the chopped ham piece’s (add them the last 10 minutes)

Simmer for 60 minutes uncovered, stirring occasionally.
