Spice Up Your Cooking with Homemade Peri Peri Marinade!

Peri Peri Sauce

Whether you’re marinating chicken, seafood, or veggies, this zesty blend will take your dishes to the next level. Get ready to bring some spice to your kitchen!

WHAT YOU NEED:

In a food processor, combine the following ingredients:

  • 1 tablespoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon sugar
  • 1 teaspoon cumin
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 3 cloves garlic
  • ½ small onion
  • ¼ cup fresh cilantro leaves
  • 2–3 chili peppers (adjust to taste)
  • ¼ cup olive oil
  • 2 tablespoons vinegar
  • Juice of 1 lemon

Blend for about 60 seconds or until smooth.

Roasted Peri Peri Chicken & Potatoes:

1. Preheat the oven to 350°F (175°C).
2. Prepare the potatoes: Wash and cut the potatoes into chunks. Slice the onion and season with dried basil, oregano, salt, and the juice of one fresh lemon. Drizzle with 1 tablespoon of olive oil and set aside.

3. Season the chicken: After cleaning the chicken, pat it dry and season with:

    • 1 ½ teaspoons salt
    • 1 ½ teaspoons black pepper
    • 1 tablespoon minced garlic

4. Assemble & bake: Place the whole chicken in a baking pan, add the seasoned potatoes, and pour the Peri Peri marinade over everything.

5. Bake at 400°F (200°C) until the chicken is fully cooked and golden brown.
