Join me on this flavorful journey as we reimagine leftovers into a dish that will undoubtedly become a family favorite.

Ingredients • 2 pie crust’s • 2 medium potatoes, cut in chunks • 2 medium carrots, cut in chunks • 4 tablespoons butter • 1 onion • 3 1⁄2 tablespoons all-purpose flour • 1 cup beef stock • 1 cup 10% cream • 2 Cups leftover prime rib roast beef, cut into small chunks • frozen peas • salt & freshly ground black pepper • 1 egg yolk, beaten with 1 tsp water
Boil the potatoes and carrots until cooked. Set aside add the peas near the end.

Sauté the onions, add the butter and flour, salt & pepper. Cook for a minute on low. Add the stock and cream to make a beautiful sauce.
Add in the beef.

Place the mixture into a pie shell, place the other pie shell on top, crimp together and brush with the eggwash.
Cook at 375° for 30-40 minutes.
